We really love using our bread machine, however the bread machine mixes are so expensive, and not even all that good. We have a cookbook full of bread machine recipes, but what we really want is a recipe for a mix, which we can make ahead and then just scoop into our bread machine whenever we need a new loaf.

Actually, I have a recipe of my own which I adapted from a more general recipe which I found online. We’ve adapted it to make it more healthful, and to include ingredients which provide Omega 3, as being vegetarians we no longer get our Omega 3 from salmon as we used to.
We also adapted it so that you wouldn’t have to add anything but water and yeast (many homemade mixes require fresh eggs).
Here is Anne’s Homemade Bread Machine Mix:
1 five-pound bag unbleached white flour
1 five-pound bag whole wheat flour
1 cup white sugar
1 cup brown sugar
1 cup buttermilk powder or powdered milk
1/2 cup flax seed meal
1/2 cup ground walnuts (walnut meal)
2 Tablespoons salt
6 Tablespoons powdered egg replacer (we use Ener-G brand, available at healthfood stores and many supermarkets)

Mix this all in a big plastic container with a tight fitting lid – make sure that the container is big enough to mix all that powder well, so that the ingredients get mixed and distributed thoroughly!
To make a loaf of bread in your bread machine, put 3 1/2 cups of bread mix in the bread machine, along with 1 cup + 2 tablespoons of water, and an envelope of yeast.
The original recipe calls for 1-2 Tablespoons of oil as well, and that does give it a texture which some people prefer, but it isn’t really necessary, particularly with the ground walnuts and flax meal.
